Authentic Cesar Salad Dressing

6 anchovies in oil or 2-3 teaspoons anchovy paste *See Cook’s Note

2 egg yolks *See Cook’s Note

3 garlic cloves

1/4 cup lemon juice

2 teaspoons dijon mustard

1/2 cup olive oil

1/2 cup parmesan cheese grated

Add the anchovies, egg yolks, garlic and lemon juice to a food processor and pulse until smooth and creamy.

Next add the mustard, olive oil and parmesan cheese. Continue to pulse until creamy smooth.

If not using right away, store in a jar with a tight lid in the refrigerator for up to 3 days.



You can use your dressing as a vegetable dip or spread it on your hot pastrami sandwich, grilled cheese sandwich or on your hamburger bun. Or just use it all for your Cesar Salad.


Cook’s Note

You can substitute anchovies for fish sauce, Worcestershire sauce or capers.

Keep in mind substituting with capers might not caught give you the same flavor as with anchovies.
