Homemade Chicken Soup

5-7 chicken bones, uncooked,

2 stalks celery, chopped

2 carrots, chopped

3-4 garlic cloves, minced

1-2 teaspoons Herbs de Providence

1/2 cup chopped cilantro, optional

1 1/2 cups Ditalini pasta, uncooked

Add chicken bones to a medium pot with 2 cups of clean water. Bring to a boil, then lower heat to low and simmer until bones and meat have no pink to them, about 40-60 minutes.

Remove bones, allow to cool, remove any meat and other eatable parts. Add to chicken broth. Discard cooked bones.

Next add celery, carrots, minced garlic, and herbs. Stir in and cook on low heat with lid on for 20 minutes or until vegetables are tender.



Next add pasta and continue simmering for another 10 minutes or until pasta is al dente.

Add cilantro (optional) and stir in. Ladle into bowls and serve.
