Vegan Hot Chocolate
1/4 cup raw cashews – soak overnight in fresh water *See Cook’s Notes
1 3/4 cup coconut milk *See Cook’s Notes
1 1/2 tablespoons raw cacao brew, can opt for cacao powder *See Cook’s Notes
1 tablespoon real maple syrup, can opt for agave syrup, or granulated sugar
1 teaspoon real vanilla

Cook’s Notes
Cashews: The cashews are in the recipe to thicken the hot chocolate some. If you prefer, in place of overnight soaking, use 2-3 tablespoons of cashew butter.
Coconut Milk: Whether you prefer almond milk, oat milk, or coconut milk as the base, there are endless
You can opt for almond milk, oat milk or any other plant-based milk.

Cacao Brew: You will need to strain the hot chocolate with a cacao brew, as it is grainy the same as ground coffee beans. Boiling it extracts the flavor same as brewing ground coffee beans. After straining cacao, discard or throw in your backyard scrap mulch or garden.
Place all ingredients in a blender and blend thoroughly, until well combined.
Next, add to a small sauce pot. Whisk mixture continuously while heating. Remove sauce pot from the stove when it starts to steam, but before it boils.

Nondairy products contain stabilizers that keep them emulsified, but can separate when heated.
Do not worry when this happens. You simply blend it with a whisk or hand held immersion blender over low heat to bring it back together.
Set aside to brew for 5 minutes, with a lid on the pot. Drain through a strainer (if using a cacao brew).
