Blueberry Bosc Pear and White Chocolate Bread Pudding
3 large eggs
4 cups heavy whipping cream
1 cup sugar
1 teaspoon salt *See Cook’s Notes
3 teaspoons vanilla extract
1 1/2 cups blueberries (fresh or frozen)
2 Bosc pears, peeled, corded, seeded, diced
1 (10 -12 ounce) package white chocolate chips
1 loaf French bread, stale, day old, cut into 1-inch cubes

This recipe is adapted from a Blueberry White Chocolate Bread Pudding. That recipe calls for 2 cups of sugar.
But this recipe is calling for 1 teaspoon of salt, and with the use of salt you can use less sugar.
The salt can enhance the sweetness of sugar, allowing you to taste the sugar compounds better. Therefore, giving you the perception that there is more sugar in the recipe than there actually is.
You can also grease the sides of the baking dish with butter and add 1/4 – 1/2 cup sugar to dish and shake it side to side to sugar coat the butter. This will help to add a little sweetness and a delicious sweet crunch to your bread pudding.
Preheat oven 350 degrees
In a large mixing bowl; combine eggs, cream, sugar and vanilla. Stir in blueberries, pears and baking chips.
Mix in bread cubes; let stand for 15 minutes or until bread is softened. Transfer to a greased 13×9 inch baking dish.

Bake, uncovered, for 50-65 minutes or until a knife inserted near the center comes out clean. Let stand for 20 minutes before serving.

Anything with white chocolate gets my vote, every time! 🙂
Ghirardelli white chocolate is the best! Most other brands use fact, imitation ingredients. I tried a white chocolate by Hershey’s and the dessert wasn’t the same.
