1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon honey
1/8 teaspoon cayenne pepper

How To Make Crispy Baked Buttermilk Popcorn Chicken
Preheat oven to 425°F (220°C).
Line a baking sheet with parchment or foil and lightly grease with olive oil, or place a wire rack over the sheet.
Season chopped chicken with salt and pepper.
To a large bowl, add buttermilk, garlic powder, paprika snd chicken, toss to coat. Cover and refrigerate for 20 to 60 minutes.
In a shallow bowl, combine panko, cornmeal, Parmesan, and cayenne.
Remove chicken from buttermilk, letting excess drip off. Press each piece firmly into the crumb mixture until fully coated.
Arrange chicken in a single layer on the prepared baking sheet. Lightly drizzle or spray with olive oil.
Bake in preheated oven for 18 to 22 minutes, flipping halfway through, until golden and cooked through (165°F internal temperature).
Optional to broil for 1 to 2 minutes for extra color and crunch.

Dipping Sauce
Stir together mayonnaise, Dijon mustard, honey, and cayenne. Serve alongside the popcorn chicken.
