Sweet Cherry Cheesecake Crumble

1 cup quick-cooking oats (not instant)

½ cup plus 2 tablespoons all-purpose flour

¼ cup sliced almonds

1 teaspoon cinnamon

¼ cup light corn syrup

2 tablespoons brown sugar, lightly packed

¼ cup unsalted butter softened

For the Filling:

8 ounces cream cheese softened

½ cup granulated sugar

1 large egg, room temperature

½ teaspoon pure almond extract

1 teaspoon pure vanilla extract

⅔ cup cherry preserves

Preheat oven to 350 degrees

Line a 8×8-inch baking pan with parchment paper.

In a large bowl with an electric mixer, mix oats, flour, almonds, cinnamon, corn syrup, brown sugar and butter until crumbly.

Press 2/3 of the mixture into the bottom of the prepared baking pan. Reserve remaining crumb mixture for topping.

In a large bowl with an electric mixer, combine cream cheese, sugar, egg and extracts until smooth.

Pour over crust. Warm cherry preserves in small sauce pan over medium, until warmed through, about 1-2 minutes.

Drop spoonfuls of preserves over cream cheese mixture.



Use a knife to swirl cherry preserves through cream cheese. Top with remaining crumb mixture.

Bake 25-30 minutes or until center is set. Cool 10 minutes on wire rack. Place in fridge for at least 1 hour to firm up cheesecake. Cut into bars and serve.
