Coconut Macadamia Cream Cheese Cookies 

Coconut Macadamia Cream Cheese Cookies are a delightful twist on the classic White Chocolate Macadamia cookie.

Coconut Macadamia Cream Cheese Cookies 

8 oz cream cheese, room temperature

½ cup (1 stick) unsalted butter, room temperature

1 cup granulated sugar

½ cup packed light brown sugar

2 teaspoons vanilla extract

2 large eggs

2 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

1 ½ cups sweetened shredded coconut

1 cup chopped macadamia nuts, optional to toast

½ cup white chocolate chips for extra sweetness

Preheat your oven to 350 degrees. Line baking sheets with parchment paper or silicone baking mats.

In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.

Gradually add the granulated sugar and brown sugar, beating until light and fluffy. Mix in the vanilla extract.

Add the eggs one at a time, beating well after each addition.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry mixture to the wet mixture, mixing until just combined.

Fold in the coconut, chopped macadamia nuts and white chocolate chips.

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake in preheated oven for 12-14 minutes, or until the edges are lightly golden. The centers should remain slightly soft.



Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
