Herb-Crusted Blueberry Goat Cheese Stuffed Chicken Breasts

4 chicken breasts, boneless, skinless

4 oz goat cheese

1/2 cup fresh blueberries

1 cup baby arugula

2 tablespoons olive oil

2 tablespoons Herbs de Provence

Salt and pepper to taste

Toothpicks or kitchen twine

In a bowl, combine the goat cheese, blueberries, and arugula. Season the mixture with a pinch of salt and pepper.

Preheat the oven to 375 degrees.

Pat the chicken breasts dry. Using a sharp knife, carefully create a pocket in the thickest part of each chicken breast, ensuring you don’t cut through completely.

Fill each chicken breast pocket with the goat cheese mixture. Secure the openings with toothpicks or kitchen twine to prevent the filling from spilling out.

Rub the outside of each chicken breast with olive oil. Sprinkle Herbs de Provence generously over the chicken, pressing gently to adhere the herbs.
