Jerk-Spiced Chicken And Pineapple Tray Bake
1 tablespoon jerk seasoning *See Cook’s Notes
1 pound (about 4-5) chicken thighs, boneless, skinless
1 pineapple, peeled, cored and cut into 1-inch chunks
1 tablespoons extra-virgin olive oil
1/4 cup cilantro, chopped
2 limes, divided, 1 for zest, the other halved to place on try
Cook’s Notes
Recipe to make 2 tablespoons of jerk seasoning.

1 teaspoon ground allspice
1/2 teaspoon dried thyme
1/2 teaspoon paprika (smoked or sweet, based on preference) – learn The Difference Between Regular And Smoked Paprika
1/4 teaspoon cayenne pepper (adjust for spice level)
1/2 teaspoon brown sugar (for a hint of sweetness)
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
Mix spies together thoroughly in a small bowl. Use in recipe when called for. Store any left over spice in a jar with a tight lid. Use your mix with roasted vegetables.
Heat the oven to 400 degrees.
Add chicken and pineapple to an extra large bowl. Add olive oil and jerk seasoning and mix until well coated.
Set the chicken thighs on a rimmed baking tray. Set the pineapple chunks and lime halves around the thighs.
Place the tray in the oven and roast until thighs reach 160 degrees, about 20-25 minutes.
Remove try from oven and transfer chicken thighs to a platter.

Next, squeeze the limes over the pineapple, than stir with the pan juices, transfer to the platter.
Sprinkle your platter of Jerk-Spiced Chicken And Pineapple with lime zest and cilantro and serve.
