Linguine With Sun-Dried Tomatoes And Artichoke Hearts

8 oz dry linguine pasta

1/2 cup sun-dried tomatoes, chopped

1 can (14 oz) artichoke hearts, drained and quartered

3 cloves garlic, minced

1/4 cup olive oil

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish



Cook the linguine pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add the chopped sun-dried tomatoes and quartered artichoke hearts to the skillet. Cook for another 3-4 minutes, stirring occasionally.



Add the cooked linguine to the skillet and toss to combine with the tomato and artichoke mixture. Cook for an additional 2-3 minutes to heat through.

Remove the skillet from heat and stir in grated Parmesan cheese. Season with salt and pepper to taste.



Serve the linguine with sun-dried tomatoes and artichoke hearts in serving plates, garnish with fresh basil leaves.

      Thanks. Was really easy and fast to make. I didn’t note in post I used a linguine with spinach and chives. But as you know you can use what ever flavor linguine you like. Now days there are so many choices. I even get a gluten free at Natural Grocers. Surprisingly, you can’t tell the difference. And of course at our age 🤪 No bloating after eating pasta. 🥹😅😂
