Instant Pot Indian Inspired Chicken Lentil Curry
1 ½ pounds chicken thighs, boneless, skinless
15-ounce can petite diced tomatoes with juice
15-ounce can coconut milk, full fat
1 cup uncooked green lentils, rinsed and drained
⅓ cup chicken stock, unsalted
1 medium yellow onion, diced
4 garlic cloves, minced
2-inch piece fresh ginger, minced
1 ½ tablespoons garam masala
2 teaspoons ground turmeric
1 teaspoons coarse salt, such as Himalayan
½ teaspoon ground black pepper
¼ teaspoon crushed red pepper flakes
Splash fresh lime juice (optional)
½ cup fresh cilantro, chopped
2 cups cooked Jasmine rice (for serving)
Place all ingredients, except lime juice (if using), cilantro and rice into the Instant Pot. Stir to combine. Place lid onto pot, turn to lock. With seal in closed position, set to high pressure for 11 minutes, natural release for 5 minutes.
When done cooking, turn seal to open position to allow remaining steam to escape. Once finished, carefully open the lid. Carefully shred chicken using two forks. Stir in lime juice (if using) and chopped cilantro.

Plate and serve the Chicken Lentil Curry over cooked rice and top with chopped cilantro, if desired.
