
Summer sausage is an American label to designate a sausage that can be kept without refrigeration until opened.
The sausage was traditionally cured during the winter months and remained consumable through summer.
Summer sausage is made with lean meat scraps are fully cooked to ensure that the sausage does not become rancid during the curing process.

The cooked meat, either beef or pork is fermented or cured using a curing salt. It is either dried or smoked, and seasonings can include mustard seeds, black pepper, garlic salt, chilies and sugar.
The sausage is fermented with a low pH that helps to slow the growth of bacteria.

Cheese Tortellini & Summer Sausage
1 16 ounce package cheese tortellini
1 16 ounce package beef summer sausage, smoked
1 cup black olives, sliced
1 cup tomato basil vinaigrette – find recipe Here
Add the 1 cup of vinaigrette and sliced olives to a large salad bowl. Set aside.
Cook tortellini according to package instructions. When water is drained, set tortellini aside to cool.
While tortellini is cooking, cut sausage into 1/2-inch slices, then slice rounds into 3 strips. Add sliced sausage meat to salad bowl.

Preparing Salad Bowl With Vinaigrette & Summer Sausage
Add cooled tortellini to the salad bowl, and mix till ingredients are well coated with the vinaigrette.

Plate and enjoy.
