
When we hear the word “salsa,” most of us think of the condiment made with tomatoes, onions and chiles.
The word “Salsa,” can be traced back to ancient times, extending as far back as the Aztec civilization. And it translates literally as “sauce,” and can encompass a wide variety of forms.
With that said, this salsa recipe has two of the most universally popular herbs, basil and parsley.
Basil adds an almost minty freshness, while parsley adds a bitter, grassy, and yet spicy flavor.
Both herbs can subtly brighten any sweet and savory dish. And this Sun-Dried Tomato Basil Salsa is no exception.
Fresh basil and parsley add herbal depth. The balsamic vinegar and extra-virgin olive oil turn it into a sauce.
Sun-Dried Tomato Basil Salsa
¼ cup oil-packed sun-dried tomatoes, rinsed and chopped fine
¼ cup chopped fresh basil
¼ cup chopped fresh parsley
¼ cup extra-virgin olive oil
2 tablespoons balsamic vinegar
1 small shallot, minced
salt and pepper
Combine sun-dried tomatoes, basil, parsley, oil, vinegar, and shallot in bowl and season with salt and pepper to taste.
