Creamy Pesto Andouille Sausage Fettuccine

16 ounces Fettuccine pasta, cooked

1 lb. of chicken breasts, skinless, boneless

1/2 pound Andouille sausage, about 2 large links


Can of Chipotle Peppers in Adobe Sauce


½ cup fresh basil pesto – find homemade recipe Here

1-2 chipotle peppers in adobo sauce, seeds removed

1/3 cup heavy cream

Cook fettuccine according to package instructions.

Meantime, slice chicken breasts horizontally 2 to 3 times, depending on thickness of the breast meat. Cut slices into 1-inch chunks.

Place a large skillet pan over medium- high heat with a tablespoon of olive oil. When heated add chicken chunks cook stirring occasionally, until chunks are cook through, about 5-7 minutes. Remove meat from heat to a large plate. Set aside.

Next add pesto to a small bowl and mix in adobo sauce and heavy cream, and set aside.


Cooked chciken and andouille sausage with creamy pesto


Place a large frying pan over medium heat and add 2 tablespoons olive oil.

Next slice links down the middle and remove meat from casings and place into pan and start moving meat around with a spatula, so meat falls apart into small chunks.

Continue cooking stirring until meat is cooked, about 6-8 minutes.

Next, add cooked chicken, pesto – chipotle sauce and mix in.

Add cooked pasta, and mix in with meat sauce till well incorporated.

Place pasta onto a serving platter, plate and serve.

    What kind of andoullie sausage did you use, cooked or uncooked, and where did you buy it? Because I can only find cooked and it’s nearly impossible to remove the casing.

      You can buy either of these two brands Aidrll’s or Al fresco – Al fresco does sell raw sausages but that depends on your local market – also let your cooked store bought cooked sausages come to room temp and the casing is easier to remove – also if you want real pork andouille you can ask at your local butcher – I hope this was helpful 🤓👍🏼🍻🍻
