Instant Pot Apple Bourbon Chicken
4 bone-in chicken pieces, thighs and legs (about 1-1/2 pounds), skin removed
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon avocado oil
1/2 cup apple cider vinegar or apple juice
1 medium onion, chopped
1/3 cup barbecue sauce
1/4 cup Bourbon
2 tablespoon maple syrup
1 garlic clove, minced
2 medium Fuji or Gala apples, coarsely chopped
Fresh parsley leaves for garnishing
Season chicken with salt and pepper.
Select saute setting on low. Add oil. When oil is hot, brown chicken; remove and keep warm.
Next add cider, stirring to loosen browned bits from pan. Add to pot and stir together onion, garlic, barbecue sauce, Bourbon, and maple syrup. Place browned seasoned chicken pieces.
Cancel sauté. Place lid over pot and lock. Close pressure-release valve. Set to pressure-cook on high for 10 minutes. Let pressure release naturally for 5 minutes; quick-release any remaining pressure.
Remove chicken, set aside keeping warm. Select saute setting and adjust for low heat. Add apples to liquid and simmer, stirring constantly, until apples are tender, about 10 minutes.
Ladle liquid and apple pieces into a bowl. Add a thigh or leg and top with parsley or cilantro.
