Rustic Charred Guacamole with Fire-Roasted Tomatillos

If you think you’ve experienced guacamole at its best, think again.

This rustic, smoky twist transforms the beloved dip into a flavor bomb of roasted tomatillos, jalapeños, and garlic smashed together with creamy avocado, fresh cilantro, and a squeeze of charred lime.

It’s chunky, bold, and unapologetically authentic Mexican — no blenders, no shortcuts, just a cast iron skillet and fire.

Whether you’re scooping it up with chips, slathering it on tacos, or just eating it straight with a spoon (we get it), this fire-roasted guac also pairs perfectly with our One-Skillet Pineapple Pork Tacos and Steak And Bacon Tacos – Tacos De Alambre, delivering layers of earthy, spicy, and citrusy depth that make it unforgettable.

Rustic Guacamole with Fire-Roasted Tomatillos

Servings: 4–6 | Prep Time: 10 min | Cook Time: 10 min

Ingredients:

2 small ripe avocados, halved and pitted

4 small tomatillos, husked and halved

1/4 small white onion, sliced

2 medium jalapeños, stemmed and deseeded

2 garlic cloves, unpeeled

1/2 cup fresh cilantro (leaves & stems), chopped

2 teaspoons fresh lime juice

1/2 lime, cut and charred for garnish

Salt to taste

Optional: Aleppo pepper flakes, red pepper flakes, smoked paprika

Optional: Pinch of ground coriander

Instructions:

Heat a cast iron skillet over medium-high. Char tomatillos, onion, jalapeños, garlic (in peel), and lime half for 7–10 minutes until blistered and fragrant. Flip halfway through.

Peel the garlic. Scoop out avocado flesh into a large bowl. Add charred ingredients except lime juice and chopped cilantro.

Mash with a fork to a chunky consistency. Add lime juice, cilantro, and ground coriander (if using). Mix in, well combined. Season with salt.

Top with chili flakes and serve with tortilla chips, tacos, or alongside grilled meats. Garnish with charred lime wedge and fresh cilantro.

Did You Know? Avocado Fun Facts

Avocados are a fruit — technically a single-seeded berry. Unlike most fruits, they’re rich in healthy monounsaturated fats instead of sugar.

They’re nutrient-dense, packed with fiber, potassium, folate, and vitamins B, E, and K — making them one of the most nutrient-rich fruits on the planet.

Native to Mexico and Central America, avocados were cultivated by the Aztecs over 7,000 years ago. The word “guacamole” comes from the Nahuatl word ahuacamolli, meaning avocado sauce.

Their healthy fats help with nutrient absorption, especially fat-soluble vitamins A, D, E, and K.
