Cacao Powder Brownies With Raspberries And Chocolate Chips
To make this Vegan dessert, replace the butter with equal parts olive oil, coconut oil, and avocado oil.
For each egg replace with 1 tablespoon of ground flaxseed or chia seeds.
Let the ground flaxseed or chia seeds sit in some water for 10 minutes, and you’ll have a slimy egg-like mixture.
Recipe:
10 tablespoons unsalted butter, room temperature
1 1/4 cups sugar
3/4 cup plus 2 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon pure vanilla extract
2 large eggs
1/2 cup all-purpose flour
1 cup raspberries
1/2 cup chocolate chips
1/2 cup chopped walnuts, optional
Position your oven rack in the lower third of your oven.
Preheat oven to 325 degrees
Line a 8-inch square pan with parchment.
To a large pot add 3 cups water, bring to simmering.
Combine butter, sugar, cocoa powder and salt in a large glass bowl, and place over the pot with water just barely simmering. Stir occasionally until butter is melted. Remove bowl from top of pot and stir mixture to combine, if needed.
Allow mixture to cool for 5-10 minutes. You do not want it too hot when you add the eggs
After mixture has cooled slightly, add vanilla and mix well.
Add eggs, one at a time, and beat vigorously until well mixed. No yellow or slimy whites showing.
To a small bowl add flour and baking powder, whisk to combine.
Add flour mixture to batter, and mix to combine, making sure no white flour is showing.
While most brownie recipes require not to over mix, this batter needs to be stirred vigorously.
Add raspberries and chocolate chips and fold them into the batter.
Add the batter to prepared baking pan and spread out evenly.

Place in preheated oven and bake for 30 to 35 minutes, or until a tester comes out with some moist crumbs attached. Allow to cool on a wire rack before serving.
