
Chapati is a unleavened flatbread that’s common in Indian, East African, and Caribbean cuisine.
The flatbread is made using a soft unleavened dough comprising of wheat flour called atta. It is more finely ground than most Western-style whole wheat flours.
Atta includes every component of the wheat grain, meaning the bran, germ and the endosperm.
It also is high in gluten content, which provides elasticity, so dough made out of atta flour is strong and can be rolled into thin sheets.
This recipe for Indian-Style Chapati Whole Wheat Flatbread is similar to the original Chapati of Indian cuisine, though are easy to make.
Indian-Style Chapati Whole Wheat Flatbread
2 cups whole wheat flour, spoon and level, unsifted
1/4 cup flour for dusting & adjusting dough
1 tablespoon cornstarch
1/2 teaspoon salt
3 1/2 tablespoons unsalted butter
3/4 cup milk
Whisk together in a large bowl the 2 cups flour, salt, and cornstarch. Set aside.
Combine butter and milk in a small sauce pan over medium heat. Heat the milk until butter is just melted. Remove from heat.
Add warm milk and butter to flour mixture and mix until combined.
Sprinkle work surface (counter top) with flour (from the 1/4 cup) then knead for a few minutes until it is smooth – it doesn’t need much kneading. Add extra flour if the dough is too sticky.
Wrap with cling wrap and rest at room temperature for 30 minutes.
Dust countertop with flour, cut dough into 6 pieces, roll into balls, then using s rolling pin, roll out into 8″ rounds, 2 – 3 mm thick.
Heat a non-stick pan over high heat, no oil needed.
Place one flatbread in the pan, cook for around 1- 1 1/2 minutes – it should puff up dramatically.

Once the underside has nice golden patches on it, flip and cook the other side for 45 seconds to 1 minute until the underside has golden spots and it puffs up again.
Stack the cooked bread and keep wrapped with a clean kitchen towel – the moisture helps soften the surface, making them even more pliable. Continue to cook with remaining pieces.

It is optional to brush the flatbread with olive oil or melted butter.
