Leftover Chicken & Vegetable Fried Rice

Leftovers is a World Cuisine, as it is common to make new dishes from leftovers.

History has shown that people from all over the world have invented many dishes from leftovers. And rightly so, as refrigeration and reliable airtight containers didn’t exist.

How We Eat Leftovers

Some of us may eat leftovers directly from the refrigerator, while others may reheat them, and yet others may use them as ingredients to make a new dish.

Here’s something you may have not known about leftovers.

The Chinese-American dish call “chop suey,”is translated as “miscellaneous leftovers.”

Although it is unlikely that a Chinese-American restaurant actual serves leftovers with the chop suey.

But in one’s own home kitchen, many dishes are brought together using leftovers. And this recipe, Leftover Chicken & Vegetable Fried Rice is one such dish.

When making this dish, take care that your chicken and rice are no more than two days old.

Leftover Chicken & Vegetable Fried Rice

2 tablespoons unsalted butter

3 cups cooked white rice

1 cup frozen peas and carrots

2 large eggs, beaten

1 small yellow onion, chopped

2 green onions, chopped

1 teaspoon garlic powder

2 tablespoons soy sauce

1 pound chicken, cooked and chopped (choice breast, thighs, legs)

salt and black pepper to taste

Melt butter in a large non-stick skillet over medium heat.

Add onions, peas and carrots and cook until tender.

Push the vegetables to one side and pour the beaten eggs on the other side. Scramble the eggs until set.

Mix the eggs and vegetables together.

Add garlic powder and soy sauce and stir to mix.

Add the cooked rice and cooked chicken. Mix well. Allow rice and chicken to warm up before serving.

Garnish with chopped green onions or cilantro (optional).
