Red Kale Beets and Sweet Cilantro Vinaigrette

Red kale and beets are powerhouses of nutrition and flavor, offering vibrant colors and a variety of health benefits.

Red kale sometimes called “scarlet kale” and “red Russian kale” has a mild nutty flavor that is slightly sweet and earthy.

The leaf of red kale is broad with flat, fringed leaves that are soft, thin and tender. The leaf resembles oak leaves or large arugula leaves.

When combined with the red kale and beets, the sweet cilantro vinaigrette serves as a complement to the earthy flavors of the vegetables.

Combining red kale, beets, and a sweet cilantro vinaigrette creates a dish that is not only visually appealing, but also pleasing to the palate.



Red Kale Beets and Sweet Cilantro Vinaigrette

For The Vinaigrette

1 cup packed cilantro

1/2 cup extra-virgin olive oil

1/4 cup lime juice

1/4 cup orange juice

1/2 teaspoon Himalayan salt

1/2 teaspoon black pepper

1 glove garlic minced

2 – 3 teaspoons sugar (optional)

Place all ingredients into a blender or food processor, and blend or process until smooth.

Place into a jar with a tighten lid, and store in the refrigerator for up to 10 days.

For The Salad

2 cups red kale, stems removed, leaves chopped

1/3 cup beets, peeled, diced, steamed (about 1 small beet)

2 -3 tablespoons pine nuts

3 – 4 tablespoons goat cheese

In a large salad bowl, combine the chopped red kale, diced beets, pine nuts, and crumbled goat cheese.

Drizzle the sweet cilantro vinaigrette over the salad ingredients. Toss gently to ensure everything is well-coated with the vinaigrette. Plate and enjoy.
