
Fingerling potatoes have a creamy but subtle sweet flavor that makes them a nice alternative to ordinary potatoes.

Fingerling’s have an elongated shape, which slightly resembles a finger. As they are harvested in colors of orange, red, yellow and purple they will surely give your plated food a bite of color.
This smaller variety of potato is considered a waxy potato, much like the larger red, white and Yukon golds are.


Fingerling’s make a great choice for roasting as they are low in starch. And they also work well for making hash browns.
Herb & Garlic Roasted Fingerling Potatoes
1 pound fingerling potatoes, mixed colors
1/2 teaspoon dried rosemary
1/3 teaspoon dried thyme
1/2 teaspoon dried garlic
1 1/2 tablespoons extra-virgin olive oil
salt, to taste
Preheat oven to 375 degrees
Line a sheet pan with aluminum foil. Set aside.
Slice potatoes long ways and put into a large bowl.
Add olive oil, herbs and garlic. Mix until well incorporated with cut potatoes.
Add potatoes to sheet pan and evenly spread potatoes over aluminum foil.
Roast 25 minutes or until potatoes are tender and browned, tossing once halfway through roasting.

Serve as a side dish with chicken or beef.
