Leftover Omelette

Leftovers is food served at a later meal. It is also considered food that remains on the serving platter and is (unconsumed) stored to eat at a later time.

So is The Leftover Omelette partly consumed while the other portion is saved to eat later as a leftover? Well, not entirely.

The Leftover Omelette starts with 2-3 fresh eggs, some cream with salt and pepper to taste.

But what makes it a leftover omelette is what is inside the omelette when prepared and cooked, leftovers of course.

Leftover Omelette

Start with 2-3 fresh eggs beaten in a small bowl or measuring cup. Add 1/4 cup heavy cream and some salt and pepper to taste.

To make it an even taster omelette add 1 tablespoon chopped arugula. Other choices can be parsley, cilantro or chives.

You well also want to shredded 1/4 cup white sharp cheddar cheese. This is for adding to the leftover stuffing and topping the omelette.

Add the chopped arugula to the beaten eggs and mix in. Set aside.

If you wish to top your omelette with cheese, turn your oven broiler to high.

The stuffing for your omelette will be leftovers of your choice.

Leftovers To Use In The Leftover Omelette

Your leftovers should not be more than 2 days old if they contain meat and dairy product. Or 3 days if it is vegetables.

Measure out about 1 cup per omelette and warm the contents and set aside.

Place a medium sized skillet over medium heat and add 1 tablespoon of butter and melt.

When butter starts to sizzle add in beaten egg mixture. Using a spatula break any forming bubbles. Move skillet back and forth over heat a few times.

When the omelette starts to cook and you notice very little liquid, add leftovers to one side of the cooked eggs. Add some of the cheese (optional). With your spatula fold the opposite side of the omelette over the leftovers.

If you want to top with cheese, slide your omelette to a iron skillet and top with cheese. Place iron skillet under broil for 2-3 minutes.

Do not walk away. Keep on eye on the omelette so it doesn’t burn while under the broiler.

Remove from broiler. Plate and serve garnished with chopped arugula.

Save any leftovers for another meal.
