Apple Cinnamon Upside-Down Cake

A delicious old fashioned apple cake dessert with sweet cinnamon and caramel-like flavors. This Apple Upside Down Cake is simple to make and deliciously yummy for dessert or even breakfast.
Apples and cinnamon together always are a tried and true classic. A deliciously yummy indulgent treat.
For those of you with a sweet tooth, this cake goes perfect with a scoop of real vanilla ice cream.

Apple Cinnamon Up-side Down Cake
10 tablespoons butter, divided, unsalted, room temperature
½ cup packed light-brown sugar
3 apples, Fuji or Gala (about 1 1/2 pounds), peeled, cored, and sliced into 8 wedges
1 tablespoon fresh lemon juice
1½ cups flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ cup sugar
2 large eggs
1 tsp. vanilla extract
½ cup whole milk
If you like you can use coconut oil in place of the butter.
Preheat oven to 350 degrees.
Coat bottom and side of a 9-inch round cake pan with 2 tablespoons butter; sprinkle bottom with brown sugar. In a medium bowl, toss apples with lemon juice.
Arrange the sliced apples in the prepared pan in a concentric circle.
In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon; set aside.
With an electric mixer, beat remaining 8 tablespoons butter, granulated sugar until light and fluffy. Add eggs and vanilla; beat until incorporated.
With mixer on low speed, alternately add the flour mixture in three parts and the milk in two, beginning and ending with flour mixture.
Spoon batter over apples in prepared pan making sure top is smooth. Bake until a toothpick inserted in the center comes out clean, 45 to 55 minutes. Cool cake in pan on a wire rack, at least 30.
To serve, run a knife around edge of pan, and invert cake onto a large dessert platter.
Give this Spiced Apple Cream Cheese Coffee Cake a try. Made with tart apples, cinnamon and nutmeg. Pairs well with a good cup of coffee.

Yummy! It looks great Randall! My mother tried something similar with quince instead of apples. It tasted great.
